I just bought a pair of Rode M5 condenser microphones along with a Rode Spacing and Microphone mount bar
The mounting bar makes it a breeze to try all the stereo approaches with a single stand - that way I'm not futzing with two stands - much easier to get a coherent stereo image.
I ended up using the ORTF technique. I position the sound hole in the middle of the ORTF triangle. That seemed to capture the best of both the bass warmness of my Taylor, along with the sparkle of the fretboard/strings while getting a nice wide stereo image.
